Hey friends! It’s the beautiful Christmas season. Christmas is all about cookies for me. I love baking cookies at this time of the year. Today I baked these delicious Holiday Shortbread Star Shaped Cookies and before I knew it, they were gone. These were so so so good. These are buttery shortbread cookies and also are dipped in chocolate. Also, the almond bites on top taste magical. These cookies are so easy to bake and kids love them so much.
These Holiday Shortbread Star Shaped Cookies are buttery with a hint of vanilla which makes them so perfect for the holidays. Also, these have a delicious feel-good factor to them, because they are small, cute, and bite-sized.
I love to enjoy these cookies with hot chocolate or tea. Especially around this time of the year, I bake these cookies and enjoy them while working on the blog or decorating my home. How to make Holiday Shortbread Star Shaped Cookies?
So, as I said earlier, Shortbread cookies are actually a cross between butter cookies and sugar cookies. Here I will briefly run you through the recipe of these adorable Holiday Shortbread Star Shaped Cookies. You can find the full recipe below.
You begin by making the dough. For the dough, take flour, salt, granulate sugar, cold butter, and vanilla extract in a bowl. Use a pastry blender to mix the butter with the flour. As the butter melts gradually, the flour is going to turn crumbly. Add a few tablespoons of ice-cold water and bring everything together to make a soft cookie dough. Once your cookie dough is ready, you can cover and refrigerate it for 1 hour or freeze it for 20 minutes.
The reason behind freezing the cookie dough is that this will re-solidify the butter which had partially melted with the warmth of my hands while the kneading process. Doing this will make out cookies turn out to be extra crunchy after they get baked.
Finally, roll the cookie dough and cut out the cookies using a Star Shaped Cookie cutter. Cut it out and place it carefully on a greased cookie baking dish.
The next, step is to re-freeze these cutout cookies for 10 minutes. Doing this will prevent the cookies from spreading in the oven and they are going to come out nice and crisp.
Bake the cookies at 350F or 180C for 10-12 minutes. After, they get done, cool them down to room temperature.
Meanwhile, melt unsweetened dark chocolate or dark melting wafers in the oven. Dip half of the cookies in the melted chocolate. Top with some chopped Almonds and allow the chocolate to set for 5 minutes and then serve these cookies.
Can I store these Holiday Shortbread Star Shaped Cookies?
Of course, you can. I do it all the time. These cookies store wonderfully at room temperature in an air-tight container for weeks. However, in my home, it never lasts that long.
You can also, store these in a freezer-friendly bag and freeze for 3 months. Before serving, pop them in the oven and re-heat at 350F for 10 minutes. Then do the frosting with chocolate and serve.
Or you can thaw these cookies in the refrigerator overnight and then serve them.
You can also, refrigerate these cookies in an air-tight container for 3 months.
Can I make these Holiday Shortbread Star Shaped Cookies ahead of time?
Of course you can. In fact, I do it always. You can cut out the cookies and store them in a freezer friendly bag for 3 months. Whenever you wish to bake these, just take them out, bake for few extra minutes, dip in chocolate, top with Almonds, and serve!

- 2 cup All-Purpose Flour
- 2 Sticks Cold Unsalted Butter
- 1 pinch salt
- ½ Tsp Vanilla Extract
- ½ cup Granulated Sugar
- 2 Tbsp Ice-Cold Water
- 10 oz Dark Melting wafers or Unsweetened Dark Chocolate
- Crushed Almonds
Instructions
- To make the shortbread cookie dough, take flour, cold butter cubes, salt, vanilla extract, and granulated sugar in a bowl. Combine using a pastry blender. As the flour gradually gets coarse and mealy, add few tablespoons of ice-cold water and combine everything to make a soft dough.Cover and refrigerate the dough for 1 hour or freeze for 20 minutes
- Roll the cookie dough on a lightly floured surface. Do not roll it too thin. Use a cookie cutter to cut the cookies. Take it out and place it carefully on a baking dish. Preheat the oven to 350F or 180C.Re-freeze the cookies for 10 minutes and then bake them for 10 minutes.
- After the cookies have been baked, allow them to come down to room temperature. Meanwhile, melt the dark chocolate in the oven at 30 seconds burts. Dip half of the cookie in the melted dark chocolate. Top with some crushed Almonds. Allow the chocolate to set for 5 minutes and then serve these cookies.
