The grinch is one of our favorite Christmas Movies. It’s so much fun to watch The grinch of Who-ville every December with the family. So, this year, to make the tradition even festive, I made this Grinch Hot Chocolate, which we enjoyed while watching the movies together!

I love watching Christmas movies around December and today I’ll be sharing with y’all one of my favorite movies, my favorite tradition. This Mint White Hot Chocolate was a huge hit with everyone!

This Green Hot Chocolate is so festive and so much fun to make. These are super delicious, and I know although it’s Christmas Eve today another Hot Chocolate is exactly what I need to get on with today’s cooking!

There might not be a better Hot Chocolate! This one is just so good. There’s a Mint extract which is a wonderful break from all of the Peppermint. Also, there’s white chocolate, whipped cream topping, and of course the Red Heart Candy.

Everybody loves these Grinch Hot Chocolate or Mint White Hot Chocolate.

Ingredients You’ll Need to Make Grinch Hot Chocolate:

  • Milk – You can go with Whole Milk or 1% or 2%. But, I would recommend whole milk. You can use Coconut Milk.
  • White Chocolate Baking Bar – I just love the use of white chocolate in this recipe. Makes it so creamy, and so delicious.
  • Pure Mint Extract – I like to use Mint Extract and not Peppermint Extract for this recipe. Mint gives you that perfect freshness.
  • Green Food Color– A drop of Green food color is enough to make that gorgeous green Grinch Hot Chocolate
  • Heavy Whipping Cream – Whipped cream to do the frosting over the hot chocolate.
  • Red Candy Hearts – Red Candy Hearts to make that adorable Grinch Heart.

How to make Grinch Hot Chocolate

Just pour in some milk in a pan. Add White chocolate baking bar and green food color. Stir well let it come to a boil and add some mint extract and finally serve!

One of the Best Ways to Get Kids eat Veggies!

Now, it has become so common in every household. Kids hate broccoli. You make broccoli and you’ll have to look at them making weird faces. But, Broccoli is so healthy, right? And, kids Need their veggies. In my opinion, making this Baked Broccoli Mac and Cheese recipe is the best way to get kids to eat their veggies.

Ingredients You’ll Need to Make this recipe:

  • Broccoli florets: I like to steam it in the Microwave for 5-minutes and then strain the water completely.
  • Elbow Macaroni – I like to use elbow macaroni. You can use any other pasta variant.
  • Ranch Dressing  –  You can always use your homemade ranch dressing.
  • Mayonnaise  – The Creamy Mayonnaise to add a touch of happiness to this recipe.
  • Shredded Cheddar Cheese – To get that cheesy melty goodness.
  • Melted Unsalted Butter – For that rich and buttery taste.
  • Salt & Pepper – Just to season this casserole.

How to Make Baked Broccoli Mac and Cheese?

I love Ranch dressing. And, I use it for so many of my recipes.

  • First, steam broccoli and cook pasta until al dente.broccoli in a bowl
  • In this recipe, I am using classic Hidden Valley Ranch Dressing. Along with that, I like to use Mayonnaise, some shredded cheddar cheese, and some melted butter just to get that rich, buttery taste.

  • Finely, season this with Salt and Pepper.
  • And lastly, add your steamed broccoli along with partially cooked elbow macaroni.

  • Toss it until the sauce gets coated on the broccoli and pasta. Put it into a baking dish and bake until the cheese is melty and bubbly.

Other Substitutions/Replacements:

  • You can replace Macaroni with rotini or rigatoni or penne or fusili.
  • Instead of Sharp Cheddar Cheese, you can use Monterey Jack Cheese or Mozzarella Cheese or fontina Cheese
  • You can add leftover cooked chicken and make it Baked Broccoli Mac and Cheese with Chicken. It will surely be a hearty dinner.

Ingredients

  • 1 Large Broccoli Crown cut into small florets (about 2-cups)
  • 12 Ounces Elbow Macaroni cook as per package directions
  • 4 Cups Shredded Cheddar Cheese
  • ¼ Cup Ranch Dressing
  • 2 Tablespoon Mayonnaise
  • 1 Cup Melted Butter
  • Salt and Pepper as per taste

Instructions

  • In a medium-sized mixing bowl add some hot water. Place your cauliflower florets in it. Microwave this at full power for 5-minutes. After 5-minutes strain the water and place them on a paper towel.
    In the meantime, Bring a pan of water to a boil on medium-high heat with a pinch of salt. Once the water comes to a boil, add elbow macaroni and cook it until half done. It will get cooked in the oven later on. Strain the water and place your pasta on a paper towel. Set Aside.
    Preheat oven to 350F or 180C.
  • In another medium-sized mixing bowl, take your steamed broccoli florets. Into that add ranch dressing, Mayonnaise, Shredded Cheddar Cheese, Melted Unsalted Butter, Salt, and Pepper. Toss well to combine.
  • Finally, add Partially cooked macaroni into this and stir well. Place this on a 9x9 inch baking sheet. Bake this in a preheated oven at 350F or 180C for 15-20 minutes or until the cheesy is bubbly and the top is lightly browned. Immediately serve and enjoy.

How to Make 3-Ingredient Peanut Butter Blossoms?

  • First mix Granulated Sugar, Egg, Peanut Butter in a medium-sized mixing bowl.
  • The dough will look sticky. See the video (below) for a better understanding of the texture of the cookie dough.
  • Now, THE MOST IMPORTANT STEP of this recipe is to chill the cookie dough. Cover the dough with plastic wrap. Place it in the freezer for at least 20-30 minutes. After 30-minutes thaw at room temperature until pliable. Scoop out a portion of cookie dough, roll it in the form of a cookie and place it on a baking sheet lined with parchment paper.
  • ALTERNATIVELY, you can scoop out a portion of the cookie dough, roll it into small balls, and place it on a baking sheet lined with parchment paper keeping a gap of at least 1 inch between each cookie. Transfer to the freezer for 30-minutes.
  • Finally, Bake the cookies in a preheated oven at 350°F for 8-10 minutes.
  • Once they are out of the oven, immediately push in the Hershey’s Kisses into the cookies. And, then allow them to cool down. Finally, enjoy!

Tips for Making the Best Peanut Butter Blossoms:

  • Your Dough will look a little sticky. There is absolutely no reason to worry about that. As I explained above the egg will hold the cookies hold their shape.
  • Adding enough granulated sugar is very important while baking these peanut butter blossom cookies.
  • If you want you can skip the Hershey’s kisses and decorate the top with two forks like you would do on a Peanut Butter cookie, and then you would have your very own No Flour Peanut Butter Cookies.

Kids starting knocking on my door, saying I want the red one, I want the red one. I wonder what makes them want the red one more.

The best part about these Crinkle Cookies is that they are so festive and so adorable. Just looking at these cute red and green cookies will bring a huge smile to your face.

Christmas Crinkle Cookies

Ingredients You’ll Need to make Christmas Crinkle Cookies:

  • All-Purpose Flour – To give a structure and shape to our cookies.
  • Baking Soda – A touch of baking soda for that little leavening in our cookies.
  • Salt – Just a pinch to make sure the flavors shine well.
  • Granulated Sugar to bring in a dose of sweetness to our cookies.
  • Unsalted Melted Butter to give our crinkle cookies that adorable butter taste.
  • Pure Vanilla Extract for that perfect holiday smell to our cookies.
  • Milk to get the cookie dough combined together.
  • Red Color and Green Color to make our cookie dough into red and green.
  • Confectioner’s Sugar for rolling the cookies

How to Make Christmas Crinkle Cookies?

  • So, in this recipe, we’ll be making two cookie doughs. First, one will be red and the second one will be green. We’ll be doing both simultaneously.
  • First, in two bowls take some flour. Into each one of them add baking soda and a pinch of salt. Whisk using a wired balloon whisk.
  • Now add melted unsalted butter, milk, and pure vanilla extract to both of this cookie dough. Use a silicone spatula to combine everything together. It should not be too liquidy. The cookie dough should be soft to touch.
  • Now, add one drop of red gel food color in one dough and green food color in another. Combine together using a silicone spatula.
  • Make small cookie balls and coat them in confectioner’s sugar completely.
  • Place them in the freezer for 10-minutes and then bake them in a preheated oven at 350F for 10-minutes.
  • Allow them to cool down in the baking tray for 10-20 minutes and then transfer them to a baking tray to cool them further.

  • Mix 1/2 cup Unsalted Melted Butter, ½ Teaspoon Pure Vanilla extract, 2 Tbsp whole milk, and ½ Cup granulated sugar in each bowl individually. Mix both using a silicone spatula and make sure the dough comes together.
  • In one bowl add 1 drop of red gel food color, and in another bowl add 1 drop of green gel food color. Mix well using a silicone spatula until the dough looks completely red and green respectively.
  • Scoop out some portion of the dough from each bowl using a teaspoon. Roll the dough between your palm.
    Coat each cookie in confectioners sugar completely and keep them on a baking sheet. Chill the cookie dough for 10-15 minutes.
    In the meantime preheat your oven to 350F OR 180C.
  • Bake cookies in a preheated oven for 10-minutes. After 10-minutes, leave it on the baking sheet for 10-15 minutes. After that, transfer that to a wired rack and then let them cool completely.

I bake cookies for the kids in my neighborhood. Every morning they come knocking on my door asking for cookies. And, so, I have a stack of cookies ready to serve.

So, today, before they come, I quickly baked this batch of Peppermint Mocha cookies. Quickly took the photographs and was eagerly waiting for them to knock on my door.

As they bite into the cookie in front of me, I keep looking at them. I cherish their innocence. I LOVE the sweet way in which they eat it all up! I love the way they come knocking on my door shouting cookie! cookie! cookie!

As a baker and as a food blogger, that moment is the most fulfilling moment of my life.

So, I asked them, can you guess what’s in it? The first one said – “Chocolate!” with a big smile on his face. The Second one Said – “Candy”. Lastly, I had to tell them about espresso!

Ingredients You’ll Need to make these Cookies?

  • All-Purpose Flour: To make the base of the cookies
  • Baking Powder: For that slight leavening.
  • Unsweetened Cocoa Powder: For that dark chocolaty taste, which makes everything better.
  • Espresso Powder: The star ingredient of this recipe.
  • Salt: The addition of salt makes everything taste better. Without salt, everything tastes so bland.
  • Melted Butter: To make sure that our cookies are soft, buttery and rich.
  • Peppermint Extract: To add that holiday touch to these cookies
  • Packed Light Brown Sugar: To make sure our cookies don’t taste all butter and also to make the coffee shine brighter.
  • Whole Milk: You can also replace this with Half and Half. You can also use buttermilk instead.
  • Crushed Holiday Peppermint Candy Canes: To give that final touch of Christmas to these cookies.

How to Make Peppermint Mocha Cookies?

  • First, mix flour, baking soda, salt, unsweetened cocoa powder, and espresso powder. Whisk it well. These are the dry ingredients that you’ll need for the cookies.

  • Next, goes in the wet ingredients. Start with melted butter, peppermint extract, packed brown sugar, and whole milk. Mix it well until the dry ingredients are well combined with the wet ingredients. You can do this using a rubber spatula or a wooden spatula.

  • Use a spoon to take out a small portion of the cookie dough. Roll it between your palm to give it a circular shape. Place it on a greased baking sheet.

  • Now, the Most IMPORTANT step is to Chill Your Cookies until it gets firm. Freezing the cookies makes sure the extra moisture gets evaporated and this is the reason you will have a chewy cookie.
  • Now bake the cookies at 350F for 10-minutes. Once they are done, it will be soft. So, let it stay on the baking sheet for a while. After about 10-minutes transfer them to a wire rack. Push in crushed holiday peppermint candy canes into the cookies and enjoy!

Other Substitutions for These Cookies:

  • You can replace espresso Powder with Instant Coffee Granules.
  • You can also add 1 large egg at room temperature if you want.
  • You can dip the cookies in melted white chocolate or you can drizzle white chocolate on these cookies.

How to Store these Cookies?

  • You can store these Peppermint Mocha cookies at room temperature, for a week but provided they are kept in an air-tight container.
  • You can also keep them in the refrigerator for up to 10-days. But, make sure that they are kept in an air-tight container.
  • You can also freeze these cookies for up to 3 months, when kept in a proper way. But, make sure it comes down to room temperaute before you serve.

How to make them Ahead of time?

  • To make these Cookies ahead of time, you can simply prepare the Peppermint Mocha cookie dough and keep it wrapped in a plastic wrap. Double wrap with an another layer of aluminium foil or cling wrap. You can also keep it in a freezer friendly bag. Pop it in the freezer. Before using you need to thaw it in the refrigerator or on the counter top until it is ready for use.

  • 1 Cups All-Purpose Flour spooned & leveled (125g)
  • 1 Teaspoon Baking Powder
  • â…› Teaspoon Salt
  • ½ Cup Unsweetened Cocoa Powder 50g
  • 2 Teaspoon Espresso Powder or 1 Teaspoon Instant Coffee Granules
  • 1 Stick Melted Unsalted Butter 1/2 cup or 113g
  • 1 Cup Packed Light Brown Sugar 200g
  • 1 Teaspoon Pure Peppermint Extract
  • 1 Tablespoon Whole Milk
  • Crushed Holiday peppermint candy canes for decoration on the cookies

Instructions

  • In a large mixing bowl combine flour, baking powder, salt, unsweetened cocoa powder, and espresso powder using a rubber spatula or a wooden spatula.
  • In the same bowl add brown sugar, melted unsalted butter, pure peppermint extract, and whole milk. Mix well. Your cookie dough shouldn't be too dry or too liquidy.
    If it feels too liquidy then add in some more flour. It should be soft to touch. If your cookie dough is too dry, then add a little milk at a time until the dryness goes away.
  • Use a spoon to scoop out a portion of the cookie dough. Place it between your palm. Roll it lightly and place them on a greased baking sheet. Transfer this to the freezer for 20-minutes.
    Meanwhile preheat your oven to 350F or 180C.
    After 20-minutes bake these cookies in a preheated oven at 350F for just 10-11 minutes. They will look soft and unbaked after 10-minutes. That is completely ok. Let the cookies stay on the baking sheet for another 10-15 minutes before you transfer them to the wire rack.
  • Once the cookies have cooled completely stuff candy canes into the cookies and enjoy.

How to make Holiday Shortbread Star Shaped Cookies?

So, as I said earlier, Shortbread cookies are actually a cross between butter cookies and sugar cookies. Here I will briefly run you through the recipe of these adorable Holiday Shortbread Star Shaped Cookies. You can find the full recipe below.

You begin by making the dough. For the dough, take flour, salt, granulate sugar, cold butter, and vanilla extract in a bowl. Use a pastry blender to mix the butter with the flour. As the butter melts gradually, the flour is going to turn crumbly. Add a few tablespoons of ice-cold water and bring everything together to make a soft cookie dough. Once your cookie dough is ready, you can cover and refrigerate it for 1 hour or freeze it for 20 minutes.

The reason behind freezing the cookie dough is that this will re-solidify the butter which had partially melted with the warmth of my hands while the kneading process. Doing this will make out cookies turn out to be extra crunchy after they get baked.

Finally, roll the cookie dough and cut out the cookies using a Star Shaped Cookie cutter. Cut it out and place it carefully on a greased cookie baking dish.

The next, step is to re-freeze these cutout cookies for 10 minutes. Doing this will prevent the cookies from spreading in the oven and they are going to come out nice and crisp.

Of course, you can. I do it all the time. These cookies store wonderfully at room temperature in an air-tight container for weeks. However, in my home, it never lasts that long.

You can also, store these in a freezer-friendly bag and freeze for 3 months. Before serving, pop them in the oven and re-heat at 350F for 10 minutes. Then do the frosting with chocolate and serve.

Or you can thaw these cookies in the refrigerator overnight and then serve them.

You can also, refrigerate these cookies in an air-tight container for 3 months.

In my white Chicken Chili recipe, I like to use traditional spices such as bay leaves. Bay leaf has that nutty fragrance that provides a beautiful base to our chicken chili. Other than that, you simply CANNOT forget ground cumin. And, I also love to add a bit of cayenne pepper. I am a person who cannot do without some spice in his food. Therefore, adding a little spice is a MUST.

Many people might tell you to skip it but, I also add a little sugar while making my chili. As you can guess, I like a balance of sweet and spicy for my White Chicken Chili.

To make the chicken chili stand out, you gotta add jalapenos as well. I love jalapenos. The heat, the spice and the color. That’s something that I really cannot get enough of.

More than anything I love adding that cheesy touch of cheddar cheese at last. In fact, how can I call a dinner comforting without some cheese in it right?

Ingredients you’ll need to make White Chicken Chili:

  • Extra Virgin Olive Oil: To sear the veggies.
  • Bay Leaves: When adding a bay leaf, I like to go with dried bay leaf. It has a better taste and more fragrance.
  • Garlic: When adding garlic, I like to add a touch of minced garlic. Minced garlic has that powerful taste to it.
  • Onions: You can use white onions.
  • Bell Pepper: For that amazing greeny touch and that delightful crunch we need bell pepper.
  • Carrots: Carrots are a must when making white chicken chili. Makes the dish taste wholesome.
  • Chicken: I love to use rotisserie chicken to make this recipe.
  • Cumin, Cayenne, Oregano, Taco Seasoning, Onion Powder, Garlic Powder: These are the spices that go into making White Chicken Chili.
  •  Salt, Pepper, and Sugar: Just to make everything taste absolutely complete.
  • Cannellini Beans: After all, how is chili complete without some cannellini beans right?
  • Chicken Broth: Yup! Just to get everything going together.
  • Frozen Corn: When using frozen corn, make sure that you soak it in water for a while before using it up.
  • Heavy Cream: Just to add that creamy touch to our chicken chili we add that heavy cream.
  • Desired Topping: I like to top it with some more jalapenos, shredded sharp cheddar cheese, and some sour cream.

How to Make White Chicken Chili?

  • First, grab a large non-stick skillet and add some oil. As the oil shimmers add bay leaf and let it release its aroma. Now add in minced garlic. Once the garlic is partially done, add in chopped onions, chopped carrots, chopped bell peppers, and saute well.

  • Once the onion is half done, add the spices. Give it a good mix and then add in cannellini beans along with frozen corn, cooked chicken, Chicken Broth, Sliced Jalapenos, and Sour Cream. Give all of that a good mix and then cover cook for at least 30-45 minutes on low heat.

  • Serve with shredded Mexican cheese, Sour Cream, Sliced Jalapenos, and finely chopped fresh cilantro.

White Chicken Chili: Substitutions/Replacements

  • Instead of white cannellini beans, you can use Great Northern Beans.
  • Instead of Mexican cheese, you can also use Monterey Jack Cheese.

What Sort of Chicken Should I use?

I would suggest you go with pre-cooked shredded chicken if you are in a hurry. Or else you can also use rotisserie chicken. If you got left-over chicken at home, then you can use that as well.

How to Make White Chicken Chili in a Slow Cooker?

If you want to make your White Chicken Chili in a slow cooker or crockpot then follow the instructions below:

  • In the pot add some oil. As the oil simmers, add chopped onions, minced garlic, chopped bell peppers, and chopped carrots. Cook until the onion gets caramelized.
  • Now Add Chicken breasts to the bottom of the slow cooker (so that it gets cooked thoroughly). Add the spices. Season with Salt and Pepper.
  • Now add cannellini beans, chicken broth, and corn. Mix well.
  • Cover and cook on low for at least 8 hours or on high for 3 hours (or until the chicken is cooked through).
  • Finally, remove the chicken and take it out in a bowl. Shred-it using two forks. Place it back in your slow cooker. Add sour cream. Cover cook on high for 10-15 minutes.
  • Stir well and finally serve with your desired toppings.

  • 2-3 Cloves Minced Garlic
  • 1 Large Carrot diced
  • 1 Large Green Bell Pepper diced
  • 2 Cans Low Sodium Chicken Broth 14.5Oz
  • ½ Teaspoon Onion Powder
  • ½ Teaspoon Garlic Powder
  • 1½ Teaspoon Ground Cumin
  • ½ Teaspoon Cayenne Pepper
  • ½ Teaspoon Dried Oregano
  • ½ Teaspoon Ground Cinnamon
  • ½ Teaspoon Taco Seasoning
  • 1 Teaspoon Granulated Sugar
  • ½ Cup Sour Cream
  • Salt & Freshly Cracked Black Pepper
  • Freshly chopped cilantro, sliced jalapenos, sour cream, and shredded Mexican cheese OPTIONAL

Instructions

  • Heat oil in a nonstick pan on medium-high heat. As the oil shimmers, add bay leaves and let it release its aroma for 10-15 seconds. Now add in minced garlic cloves and let them cook until you smell a beautiful garlicky aroma. Remember garlic shouldn't change its color to dark brown.
  • Now add chopped onions, chopped bell peppers, and chopped carrots. Saute them over medium-low heat until the onion gets partially caramelized.
  • Now add garlic powder, onion powder, dried oregano, ground cinnamon, taco seasoning, cayenne pepper, and of course, Ground Cumin. Mix well until the spices release their oil. This process takes about 3-4 minutes on medium-low heat. Keep stirring often and make sure that the spices don't stick to the bottom of the pan.
  • Now add canned cannellini beans, chicken broth, corn, and pre-cooked chicken pieces. Stir well. Season with salt and freshly cracked black pepper. Add some granulated sugar and mix well.
    Now add 1/2 cup Sour cream and mix well. Cover cook for 45-minutes on low heat. Shred the chicken partially using two forks.
  • Garnish with some sliced jalapenos, finely chopped fresh cilantro, shredded Mexican cheese, and sour cream. Enjoy.

Sugar Cookies are buttery and sweet cookies with a delicious glaze on top. These are crisp on the edges and do not lose their shape even while getting baked. All you need is a good cookie cutter to get your favorite shape of cookie and you’re going to love these so so much!

Christmas and Cookies are almost inseparable. These Sugar cookies have a perfect vanilla and sugar flavor to them. Also, these cookies freeze easily and stay fresh for days.

I always make Eggless cookies. These cookies come out perfect even without using eggs. I do not use Eggs so often in baking. I mean I do use it for some recipes but I prefer not to especially for cookies and muffins. To get that rich texture and flavor for my cookies I use more butter. The butter adds to the fudginess and richness of these cookies.

How to make Christmas Tree Sugar Cookies

Making the Sugar cookie is so easy.

First – You begin by making the cookie dough. For the cookie dough, combine flour with cold butter until it gets coarse and crumbly. Add the granulated sugar and vanilla extract, combine to make a dough. If the dough is too dry and crumbly add few tablespoons of ice-cold water and mix until you have perfect cookie dough. When your cookie dough is ready you can cover and freeze it for 20 minutes or refrigerate for 30 minutes.

After chilling the dough to harden the butter, it’s time to roll the dough on a lightly floured surface and use a cookie cutter to cut out the cookies. Here, I have used Christmas Tree shaped cookie cutter. You can go ahead and use any shape of cookie cutter you love.

Finally, use an offset spatula to pick up the cookies and place them on a greased baking dish. Bake the sugar cookies for 10 minutes. After they get baked, allow them to cool down to room temperature in the same pan itself for 5minutes.

How to make the Sugar Glaze for Decoration

You can make a quick sugar glaze to decorate your sugar cookie. Ideally, we use Royal Icing for the decoration of sugar cookies. However, you can always use a sugar glaze as well to decorate the cookies.

For making the sugar glaze, combine 1 cup of sugar with 2 tablespoons of milk and 1/2 tsp of Vanilla. So it’s a simple ratio of 1:2:1/2 which you got to remember for making the perfect sugar glaze. Just whisk everything until it gets smooth. Add a few drops of Green Gel Food Color and mix well. Finally, take it up in a piping bag or just use a spoon to decorate it over the cookies. You can dip the cookies in the glaze as well, however, I think that adding the glaze with a spoon is the best idea.

Allow the glaze to set for 10 minutes. If it’s too hot and humid around where you live pop this in the freezer and the glaze will set quickly.

How to store Sugar Cookies?

You can wrap these cookies in a plastic food wrap or aluminum foil and store these in the freezer for 3 months. Before reuse, thaw them overnight in the refrigerator and serve.

You can also cover and store these cookies in the refrigerator for 1 month

You can store these cookies at room temperature on the counter for 1 week.

How can I make Sugar Cookies Ahead of Time?

You can make the Sugar Cookie dough, wrap it tightly with plastic food wrap as well as aluminum foil and then store it in the freezer for 3 months.

The best way to make it ahead of time is to cut out the sugar cookies in the shape of a Christmas tree or any shape of a cookie cutter you’re using and then freeze them. That way, you do not have to thaw the cookies. You can pop these directly in the oven and bake for 3 – 4 more minutes.

Ingredients

  • ½ cup Cold Unsalted butter 1 stick
  • ½ cup Granulated Sugar 100gm or 3.55 Oz
  • 1 Tsp Pure Vanilla Extract
  • 2 cup All-Purpose Flour

  • 2 Tbsp Ice cold water

Sugar Glaze

  • 1 cup Granulated Sugar
  • 2 Tbsp Whole Milk can replace with 2% milk or Almond milk
  • ½ Tsp Pure Vanilla Extract
  • 1 Drop Green Gel Food Color
  • Christmas Sprinkles as per requirement

Instructions

  • To make the Sugar Cookie dough, combine the butter with flour, sugar, and vanilla extract until the butter makes the flour feel crumbly and mealy. Add a few tablespoons of ice-cold water and combine everything to make a dough that is soft to touch but is non-sticky.
    Cover and freeze the dough for 20 minutes or refrigerate for 1 hour.
    Preheat the oven to 350F or 180C and grease a cookie baking dish with oil.

  • Roll the dough to 1-inch thickness on a lightly floured surface and cut out Christmas tree-shaped cookies using a cookie cutter. Place it carefully on a greased cookie baking dish.
    Freeze the cut-out cookies for 10-minutes and then bake for 10 minutes at 350F or 180C.

  • Make the sugar glaze by combining granulated sugar with milk and vanilla extract. Add the green food color and make a green glaze.
    After the cookies have been baked, cool them down and top with the sugar glaze. Decorate with Sprinkles on top and freeze the cookies for 5 minutes or until the sugar glaze sets on top. Serve.

Gingerbread Muffins Recipe

This beautiful holiday season means nothing to me If I do not bake some Gingerbread muffins at home. I just love them so much. In fact, I love everything Gingerbread. I generally use ground ginger to make these muffins. But, many people use ginger paste or some people even use fresh ginger to make these gorgeous muffins.

Anyhoo, talking about the recipe. These adorable Gingerbread Muffins are like the only thing that you would want. Yup! Loaded with spices, they are warm, festive, and super perfect for the occasion.

Talking about Gingerbread muffins, I am so excited to share with y’all a short story that led me to make this recipe. I am a huge fan of cookbooks and cooking shows. So, the other day, I was reading this cookbook and there I saw a cute recipe of probably cranberry muffins! The image was so compelling that those cranberries were looking like they are dancing in front of the muffins.

I wanted to recreate something like that. I woke up today and found some dried cranberries in my refrigerator. I was so sad, that how am I gonna make my cranberry muffins? Well, then I saw this pack of spices neatly arranged in my kitchen.

Well, somehow the baker within me wanted to do something with the spices! After all, what else would you need for a cold morning right? Some hot chocolate, some spice muffins, and some amazing dinner. right? Ain’t that something that we all want?

Once that was decided I quickly headed over to my kitchen and started making my Gingerbread Muffins. Man oh, Man! How exciting that was!

Talking about Gingerbread Spices, I get this Often. What spices do you use to make Gingerbread Spices?

Well, the answer is pretty simple. It’s just a combination of four of my favorite spices. Ground Cinnamon, Ground Nutmeg, Ground Cloves, and finally Ground Ginger!

Ingredients You’d Need to Make Moist Gingerbread Muffins:

  • All-Purpose Flour: You can replace this with Whole Wheat flour if you want.
  • Baking Soda & Baking Powder: These are the two leavening agents that we need for our gingerbread muffins recipe.
  • Ground Cinnamon, Ground Nutmeg, Ground Cloves, and Ground Ginger: These are the gingerbread spices that we just talked about.
  • Molasses: The ingredient that makes everything Gingerbread so damn special.
  • Pure Vanilla Extract: The Ingredient that brings that gorgeous smell to your kitchen.
  • Vegetable Oil: To get that moist Gingerbread Muffins. Feel free to replace this with coconut oil for a healthier version.
  • Granulated Sugar: After all, it’s the Holidays! We gotta binge on sweets, right?

How to Make Gingerbread Muffins?

  • First, mix flour with baking soda and baking powder! Yup, I use both. Helps the muffins rise better.
  • Next, add in your Gingerbread Spices. Start off with Ground Cinnamon, then ground Nutmeg, then Ground Cloves, and Finally a LOT of Ground Ginger. Give all of that a good mix.
  • And, now add your sticky molasses, granulated sugar, along with Pure Vanilla extract and some Vegetable Oil. I like to use vegetable oil instead of melted butter while making muffins. Oil helps the muffins taste moist. You are free to substitute Vegetable Oil with Coconut Oil in case you want to make Healthy Gingerbread Muffins!
  • And, that’s it. You just mix it all up real good and then pour it in a loaf pan and bake it at 350°F for 12-15 minutes.
  • Lastly, I like to top it off with some extra dose of Brown Sugar. You are free to add crystallized sugar or molasses or anything else. It’s the holidays, be free and enjoy!

Other Substitutions/Replacements:

  • If you feel that your muffin batter is too dry, do not add milk. Rather, add some Buttermilk. Wondering how to make buttermilk at home? Just mix 1/4 cup of milk with 1 teaspoon of white vinegar or 1 teaspoon of lemon juice. Stir well and let it sit at room temperature for 5-10 minutes. And, there you have it. Your homemade Buttermilk. You can adjust the quantity of buttermilk as per your needs.
  • Instead of Vegetable Oil, you can use coconut oil. Coconut oil is a healthier alternative to Vegetable oil. Feel free to replace it.
  • Instead of All-Purpose Flour, you can use Whole Wheat flour. If you want to make it Gluten-free you can use Gluten-free flour.

How to Store these Gingerbread Muffins?

  • Store them at room temperature covered in an air-tight container for 3-4 days. You can refrigerate the muffins after covering each muffin tightly in a plastic wrap.
  • When you want to serve the next time, make sure you let it thaw at room temperature for an hour.

  • 2 Cups All-Purpose Flour 240g
  • ½ Tsp Baking Soda
  • ½ Tsp Baking Powder

  • ½ Tsp Ground Cloves
  • 1 Tsp Pure Vanilla Extract
  • ¾ Cup Dark Molasses
  • ½ Cup Vegetable Oil 118ml
  • ½ Cup Granulated Sugar 100g
  • Brown Sugar for dusting on top (optional)

Instructions

  • In a medium-sized mixing bowl mix All-Purpose flour with baking soda, baking powder, ground cloves, ground cinnamon, ground nutmeg, and ground ginger. Mix it well using a wired whisk or a rubber spatula.
    Preheat oven to 350F or 180C and grease a muffin tin with cooking spray. Line it with cupcake liners.

  • In the same bowl add Molasses, Vegetable Oil, Pure Vanilla Extract, and Granulated Sugar. Mix well using a rubber or wooden spatula until you see a smooth and lumpy batter.

  • Prepare a baking tray with cooking spray. Line it with cupcake liners. Use an Ice cream scoop to scoop out the muffin mixture and pour it into the prepared muffin tray. Pat onto the kitchen counter. And place it in a preheated oven at 350F. Bake for 12-13 minutes.
    Check with a toothpick. It should come out with a few moist crumbs.
