White Chicken Chili is so easy and so comforting that you will feel like making it at least once a week. I am a huge fan of chicken dinners. They are cozy, comforting, and super easy. Especially this White Chicken Chili recipe is so damn easy. It’s just adding all the ingredients, tossing them for a while, covering cooking until done, and finally serving it with some fresh garnish.
In my white Chicken Chili recipe, I like to use traditional spices such as bay leaves. Bay leaf has that nutty fragrance that provides a beautiful base to our chicken chili. Other than that, you simply CANNOT forget ground cumin. And, I also love to add a bit of cayenne pepper. I am a person who cannot do without some spice in his food. Therefore, adding a little spice is a MUST.
Many people might tell you to skip it but, I also add a little sugar while making my chili. As you can guess, I like a balance of sweet and spicy for my White Chicken Chili.
To make the chicken chili stand out, you gotta add jalapenos as well. I love jalapenos. The heat, the spice and the color. That’s something that I really cannot get enough of.
More than anything I love adding that cheesy touch of cheddar cheese at last. In fact, how can I call a dinner comforting without some cheese in it right?
Ingredients you’ll need to make White Chicken Chili:
- Extra Virgin Olive Oil: To sear the veggies.
- Bay Leaves: When adding a bay leaf, I like to go with dried bay leaf. It has a better taste and more fragrance.
- Garlic: When adding garlic, I like to add a touch of minced garlic. Minced garlic has that powerful taste to it.
- Onions: You can use white onions.
- Bell Pepper: For that amazing greeny touch and that delightful crunch we need bell pepper.
- Carrots: Carrots are a must when making white chicken chili. Makes the dish taste wholesome.
- Chicken: I love to use rotisserie chicken to make this recipe.
- Cumin, Cayenne, Oregano, Taco Seasoning, Onion Powder, Garlic Powder: These are the spices that go into making White Chicken Chili.
- Salt, Pepper, and Sugar: Just to make everything taste absolutely complete.
- Cannellini Beans: After all, how is chili complete without some cannellini beans right?
- Chicken Broth: Yup! Just to get everything going together.
- Frozen Corn: When using frozen corn, make sure that you soak it in water for a while before using it up.
- Heavy Cream: Just to add that creamy touch to our chicken chili we add that heavy cream.
- Desired Topping: I like to top it with some more jalapenos, shredded sharp cheddar cheese, and some sour cream.
How to Make White Chicken Chili?
- First, grab a large non-stick skillet and add some oil. As the oil shimmers add bay leaf and let it release its aroma. Now add in minced garlic. Once the garlic is partially done, add in chopped onions, chopped carrots, chopped bell peppers, and saute well.
- Once the onion is half done, add the spices. Give it a good mix and then add in cannellini beans along with frozen corn, cooked chicken, Chicken Broth, Sliced Jalapenos, and Sour Cream. Give all of that a good mix and then cover cook for at least 30-45 minutes on low heat.
- Serve with shredded Mexican cheese, Sour Cream, Sliced Jalapenos, and finely chopped fresh cilantro.
White Chicken Chili: Substitutions/Replacements
- Instead of white cannellini beans, you can use Great Northern Beans.
- Instead of Mexican cheese, you can also use Monterey Jack Cheese.
What Sort of Chicken Should I use?
I would suggest you go with pre-cooked shredded chicken if you are in a hurry. Or else you can also use rotisserie chicken. If you got left-over chicken at home, then you can use that as well.
How to Make White Chicken Chili in a Slow Cooker?
If you want to make your White Chicken Chili in a slow cooker or crockpot then follow the instructions below:
- In the pot add some oil. As the oil simmers, add chopped onions, minced garlic, chopped bell peppers, and chopped carrots. Cook until the onion gets caramelized.
- Now Add Chicken breasts to the bottom of the slow cooker (so that it gets cooked thoroughly). Add the spices. Season with Salt and Pepper.
- Now add cannellini beans, chicken broth, and corn. Mix well.
- Cover and cook on low for at least 8 hours or on high for 3 hours (or until the chicken is cooked through).
- Finally, remove the chicken and take it out in a bowl. Shred-it using two forks. Place it back in your slow cooker. Add sour cream. Cover cook on high for 10-15 minutes.
- Stir well and finally serve with your desired toppings.

- 1 lb Boneless Skinless Chicken breasts pre-cooked
- 1 Tbsp Olive Oil
- 2 pieces Bay leaves
- 1 large Red Onion diced
- 2-3 Cloves Minced Garlic
- 1 Large Carrot diced
- 1 Large Green Bell Pepper diced
- 2 Cans Low Sodium Chicken Broth 14.5Oz
- ½ Teaspoon Onion Powder
- ½ Teaspoon Garlic Powder
- 1½ Teaspoon Ground Cumin
- ½ Teaspoon Cayenne Pepper
- ½ Teaspoon Dried Oregano
- ½ Teaspoon Ground Cinnamon
- ½ Teaspoon Taco Seasoning
- 1 Teaspoon Granulated Sugar
- ½ Cup Sour Cream
- Salt & Freshly Cracked Black Pepper
- Freshly chopped cilantro, sliced jalapenos, sour cream, and shredded Mexican cheese OPTIONAL
Instructions
- Heat oil in a nonstick pan on medium-high heat. As the oil shimmers, add bay leaves and let it release its aroma for 10-15 seconds. Now add in minced garlic cloves and let them cook until you smell a beautiful garlicky aroma. Remember garlic shouldn't change its color to dark brown.
- Now add chopped onions, chopped bell peppers, and chopped carrots. Saute them over medium-low heat until the onion gets partially caramelized.
- Now add garlic powder, onion powder, dried oregano, ground cinnamon, taco seasoning, cayenne pepper, and of course, Ground Cumin. Mix well until the spices release their oil. This process takes about 3-4 minutes on medium-low heat. Keep stirring often and make sure that the spices don't stick to the bottom of the pan.
- Now add canned cannellini beans, chicken broth, corn, and pre-cooked chicken pieces. Stir well. Season with salt and freshly cracked black pepper. Add some granulated sugar and mix well. Now add 1/2 cup Sour cream and mix well. Cover cook for 45-minutes on low heat. Shred the chicken partially using two forks.
- Garnish with some sliced jalapenos, finely chopped fresh cilantro, shredded Mexican cheese, and sour cream. Enjoy.
